A modern hunting crossbow will physically send a bolt several hundred yards. It will hold a lethal, repeatable group out to roughly 40-60 yards in practised hands, and a new shooter should treat 30-40 yards as the ceiling until groups prove otherwise.

Effective range: where the sight system runs out
A bolt is heavy and blunt-nosed. It sheds speed quickly and drops steeply, and past a point the gaps between your scope's aiming marks get so large that a small range-estimation error becomes a large miss. Faster bows flatten that curve, which is what the speed number on the box is actually buying you - not power, but forgiveness for misjudging distance.
This is why we treat advertised speed as a secondary criterion rather than a headline. Thirty extra feet per second changes the drop at forty yards far less than most listings imply.
Your range: the only one you get to choose
Set it with a target, not with an opinion. Shoot three-bolt groups at increasing distance in the conditions you will actually hunt in - same clothing, same rest or lack of one, same light. Your personal limit is the last distance at which all three stay inside a circle the size of a deer's vitals, every time, not on your best attempt.

Why bolt flight time matters more than it sounds
At hunting distances a bolt is in the air long enough for a relaxed animal to take a step, and for an alert one to drop at the sound of the shot. Crossbows are loud. This is a real argument for keeping shots closer than your paper-target ability suggests, and it is not something a faster bow fully solves.

Why the drop gets steep so quickly

Range is not only an accuracy question. A bolt arriving at fifty yards carries meaningfully less energy than the same bolt at twenty, and penetration is what turns a hit into a clean, quick result. Heavier bolts hold energy better over distance than very light fast ones, which is part of why chasing the highest advertised speed with the lightest bolts is a poor trade for hunting.
How to find your own number properly
Work outward in ten-yard steps. At each distance shoot three bolts, from the position and rest you will actually hunt from, wearing what you will actually wear. Keep going until the group opens past the size of the vitals you are aiming at. Then step back one distance - that is your working range, and it is usually shorter than people expect and shorter than their best single group suggests.

Because a bolt travels far beyond any distance you would shoot at an animal, the question is never only what you are aiming at but what is behind it and what happens on a miss. Shoot into a proper backstop on the range, and in the field decline shots where you cannot account for the background.
